Have Cake Will Travel

So a friend of mine at work likes okay LOVES when I bake. We have gone so far as to strike up a deal where he provides something and I bake it up! This week it was Lemons and I'm Addicted to the Lemon Loaf at Starbucks so I attempted to recreate it and came up with this.

Its close but not exact. Its a little denser and might need a little more lemon flavoring. Hopefully he will give me more lemons for me to try.

But here is the Recipe:

Starbucks Hack Lemon Loaf

3 cups flour
1/2 teaspoon Baking Soda
1/2 teaspoon Baking Powder
1/2 teaspoon Salt
2 cups sugar
1 cup butter
4 eggs
3/4 cup buttermilk (take milk add 3/4 teaspoon of lemon juice allow to sit for a few minutes until curdling)
1 1/2 tablespoon lemon zest
1/2 cup fresh lemon juice (about 3 large lemons)
1 tablespoon vanilla extract
1 tablespoon lemon extract
No stick spray
1 12 cup bundt pan or 10 inch angle food cake pan

Pre-heat oven 325

In bowl mix together flour, baking soda, baking powder, and salt (dry ingredients)

Melt butter in microwave if you dont have time to let it sit out and soften. Mix together butter and sugar add eggs one at time. scrape sides as you add eggs to ensure proper mixing.

Alternate addition of buttermilk and dry ingredients (buttermilk, dry, buttermilk, dry)

Add lemon zest, lemon juice, vanilla extract, and lemon extract. Make sure it is mixed in well.

Grease pan add batter place in oven to bake for 1 hour.

Allow to cool.

Glaze
1 1/2 cup powedered sugar
2 tablespoons melted butter
Lemon Juice to taste (for me 1 1/2 tablespoons)

Mix all ingredients together until you get a consistency you like. Add milk to get more runny but make sure to add slowly its easier to make it more liquidy its harder to make it stiff if you add to much.

Pour over cake as you choose!

Cut a slice sit on the couch and enjoy the fruits of your Labor!
