Do you Crochet cause I Crochet everybody do the Crochet

Yes I Crochet...and I'm not 60 year old! I have to say its one of those things I turn to when well I'm sick of the sewing machine or I'm stuck somewhere without one! Here was my latest projects and YES its a Xmas Gift for someone who well I cant tell you but keep guessing. Its made of Double Crochet and is out of an Apply Green and Grey Yarn. Very easy and hopefully loved dearly by the person who gets it!
Speaking of Guessing things let me tell you about my innate ability to guess my gifts weeks in advance to receiving them. This has frustrated Boy Toy so much that he now just lets me pick out my gift and he goes and buys them. The past few years he as attempted to keep my gifts a secret but then i get to guessing and in about 10-20 minutes I've got it pinned down to about 3 things. Well Boy Toy tries to keep a striaght face but that is the give away! I know I'm horrible!!! But sometimes a girls got to know what she is getting! Surprises are fun but so is guessing the surprise! Sorry Boy Toy one day you will get me I'm sure but until then Happy Hunting!
Well in a few hours (yes by few I mean less than 12) I will be home in Sunny Southern California. I'm a little disappointed that its not going to be warm. I was planning on laying out in the bikini at the pool and taking in the sun while reading a book! Darn Weather. Until then hope everyone has a happy holiday and I'm going to leave you with a a few photos of some xmas gifts kind of a tease can you guess who is getting what?

New Blog!!!

Yes its true...I started another blog. But this one is for those of you interested in purchasing stuff on etsy and want custom made items. I'm posting up my Stash of Fabrics and nick knacks so people can pick out what they want! Whoo Hoo. So HERE it is and it will probably be updated later today when I'm off work. I'm going to try to con the boy toy into going to down town LA on Friday or Saturday to get some new fabrics (like I don't have enough already!)

I know its Thanksgiving but...I made Chicken!!!

Okay okay so Thursday is the big day. Its Turkey day!!! Ill be flying home to be with the family and hopefully doing some other stuff too like shopping and cooking. But this week has been crazy and its only Tuesday. I have to say I'm so excited someone actually might want to buy some stuff from me on Etsy. I know they would be my first customer! I might just have to send them a card with the stuff and say thanks for being my first customer!!! WHOO HOO. That's about the ONLY bright spot on the week. As for the weekend I am one step closer to being done with xmas!!! It feels good to be almost done with xmas and the fact that I didn't spend loads of money helps even more!

Has anyone been listening to Mark and Brian in the morning? I love them first off but second of all they have been calling people's who's last name have something to do with Thanksgiving like Mr. Stuffing, Mrs Yams, or Mr. Cranberry. It is by far one of the most entertaining things to listen to. Its even more entertaining to see people actually play along with it and talk to them! They have defiantly gotten me in the mood for Thanksgiving!

Ive also noticed that my blog has become more of a cooking site than a crafting site. This will change shortly (after xmas). The goal is to get this back to crafting and away from cooking. But since were on the cooking topic I did cook on Friday and it was AMAZING. One whole chicken with a honey rosemary glaze and some roasted potato's that are to die for! Here's the pictures and the recipes as usual good luck and Happy Thanksgiving.

Honey Rosemary Roasted Chicken

Ingredients:
1 Chicken- you can choose your size and follow the directions and make some minor adjustments
5 Tbs Olive Oil
5 Tbs-Honey
4 Cloves Garlic Chopped
4-6 Sprigs of Rosemary you want the leaves so pull those suckers off
4-6 Sprigs of Thyme don't worry about pulling off the leaves too much work
6 Turns of Pepper
3 Turns of Salt
1/2 an Onion

Turn oven on to 425 degrees for a 5 lb chicken it will take about 1.5-2 hours of cooking.

Take all the ingredients except Chicken and onion and combine in a bowl and set to the side

To prepare the chicken you want to pull the skin away from the meat so you can slide your hand in between the skin and the meat so you can rub on the sauce you just made. you want to do this on the breast side and the non breast side (ie the back of the chicken?)

Next take some of the sauce and rub it in between the skin and the meat. Keep a little extra to put on top of the skin as well.

Next place the half of the onion inside the bird along with the thyme (see why you don't want to waste time taking off the leaves).

Place the bird breast down in a Pyrex pan (or any casserole type dish you have) and let it cook for about 1 hour or so until the back of the chicken is dark brown. Why dark brown because your not going to eat the skin! 1. its not healthy 2. its kinda grody and 3. were on a diet!

Take the chicken out of the oven and flip it so now its breast side up! Cook for another 30 mins to an hour until the skin looks like the picture. Let the thing cool for at least 10-20 minutes and then pull out the onion and thyme and throw it away. Next carve it up for the kiddies

Now for those Potato's

Rosemary Roasted Potato's

Ingredients
6 Red Potato's cut in quarters(you can make more I'm cooking for one person here)
1/4 Cup of Fresh Parsley
4 Sprigs of Fresh Rosemary you want the leaves only!
5 Cloves of Garlic Chopped (you should have sliver like shapes you don't want to dice this up)
1/2 onion which should be cut in half again
salt and pepper to taste (for me about 3 grinds salt and 8 grinds pepper I'm a pepper person)
Olive Oil to drizzle on top

Oven should be a t 425 degrees because your chicken is a cooking

Place potato's and onions in the casserole dish. You should take the onion apart so you have little leave like shapes in with the potato's. Next take all the other ingredients except the olive and pour them on top. Now take your hands and mix them in with the potato's and onions so they are coated. Next drizzle Olive oil over the top of the potato's you should ideally only use about 2-3 tablespoons you can also use your hands to mix it in with the potato's if you like but its not necessary.

Next you want to put them in the oven with the chicken when you think the chicken only needs about 15 more minutes. Put them in the oven for about 30-45 minutes or until a knife can easily pierce the potato's.

Enjoy!

Friday...

Fridays are AMAZING...especially when they have a funny story involved. So this morning I was telling myself I'm getting out of bed and going to the gym before work, yeah right. So instead I had a nice long sleep which involved a dream which was well embarrassing for me at least (def not going into it). So I rolled out of bed at 7ish to get my booty to work when I arrived I did my normal routine of putting stuff in the fridge, well I open the door and the most GOD AWFUL smell came running out. So I was blessed with the task of cleaning out old food and by old I mean expiration dates of MAY 2008. What are these people thinking. I got to one container of food that when I opened it the fumes started to pour out you could see them like when you add water and dry ice together...grody!!! Then it was off to the computer doing well accounting stuff. I'm sure your not interested in it so I'm gonna pass on that.

Well by far the best thing about Fridays is...I get off at 12. Yes I know people out there are giving me the look. Well you know what get over it! All I can think about when I get off on Fridays is that I'M FREE the shackles have been removed for a few days!!! AAAH Well Fridays arn't all that glamorous around here I literally catch up on errands and cleaning (oh how I loathe the). First off to the bank in down town Davis where the traffic was more or less worse than LA got done with that to head off to the free way where there was a lovely accident blocking the on ramp so I headed to south Davis to the only other on ramp in that direction. Drove back to sac stopped at Target for Cleaning supplies and got a treat (a new cupcake pan that's shaped like snowmen faces). Then to the uncles to clean up and start laundry (where I'll be heading next to change out laundry) and finally back to the apt to clean it (oh so not fun but I'm not at work!). Well after all of this I headed down town to Sea's candy to get the student assistants a little treat for thanksgiving and then off to the grocery store.

Now this is where it gets interesting. I go in grab what little I needed in the grocery store and got in line to pay. Everything was going great then this group of girls with a 3 year old boy (its always those little boys) show up. They are behind me I'm paying talking to the cashier and the little boy comes over and attempts to get my attention by poking my on the side of my leg. I look down he smiles and starts to walk off. Well he came back while I was not paying attention and proceeds to GOOSED me. Yes in front of everyone pinches me in the behind!!! Well my first reaction was to get away get away from whatever is doing that!!! I jump the girls start to laugh (although you can tell they arn't supposed to) the cashier just looks at me like I'm crazy and the little boy well just stands there with a smile on his face! Needless to say the girls apologized and I walked off still trying to get a handle on what just happened and how the little boy got away with that! Just FYI if I ever have kids and one of them pulls that stunt...oooh man are they in for it and I'll do it in the store! Hmm well though id give you all a little Friday laugh! And remember next week is a 3 Day Week for most of us out there!!!

Poodles

Well the weekend flew by with the boy toy around and it didn’t help that I was a bit under the weather and more inclined to sleep while he was here than actually go out. So our weekend started out with us going to look at a house for my uncle and then off to the apt to clean up. This really means we cleaned up a little then made a bigger mess by getting out the trusty inflatable mattress and pushing all my furniture out of the way (ie the one chair I have) and putting the bed together. My apt is so small he actually had to leave his bag in the entry way because there was no more room...poor poodles.

Why poodles you ask? Why does the boy toy have such a ridiculous nickname besides boy toy? Well it goes back about a year or more to when he had to challenge me into thinking up the most ludicrous nickname. He proudly boasted that he has had every nickname in the book. Well he doesn’t know me very well or my imagination. So we were sitting there and it came to me What boy in his right mind would want to be called poodles in public? Well apparently he did because he had to challenge me so hence the poodles. Don’t worry folks I only use it to embarrass him every so often.

But back to the weekend of sleep. So we decided this weekend we would try out some new places (or at least they were new to him). I’m in LOVE with Texas BBQ (I know I'm a sprinkaholic but come on I got to eat real food every once in a while) and I've officially found the spot. No it’s not the best I’ve ever had but it will do pulled pork sandwiches mnnnnn. Texas West BBQ it’s spicy its sweet it’s everything a girl could wish for in a bbq sandwich (notice how the diet went out the door). I’m afraid that I may be going to this place more than I should but whatever a girls got to have bbq! That was pretty much the end of the evening for me I ended up taking med's and passing out at 8pm and not awaking till 10am. And this in itself was depressing cause I’m usually up at 7am out the door to the gym and on my way to a productive day. Today was NOT going to be that day. Once I finally got myself out of bed we went to McKinley Park and walked the track and then headed down to 33rd and N where another restaurant of my liking was awaiting

MR. Pickles, I’m a sucker for a good name! We walked it and it was as if heavens doors opened into a sandwich shop! I have to say I highly recommend Mr. Pickles it was fresh and the bread, which ultimately makes or breaks a sandwich made this sandwich! And to top it off you get a warm cookie with your sandwich! (This place had me at hello). Not only do they have sandwiches but yes they sell those large dill pickles from the jar! 99cents of enjoyment! After lunch I was spent I had to lie down! As for Poodles he was getting ready to take an exam at sac state that afternoon and I had promised him some chicken potpie and pumpkin pie for dinner. So after the quick little rest it was time to start cooking where I made this... Pumpkin pie and chicken potpie and look I even included the recopies!!! The chicken potpie turns out a little runny at first so if you want it stiffer add 1/4 cup more of the flour to the recipe!

Chicken Pot Pie

Ingredients:
2-3 boneless skinless chicken breasts cooked (ill tell you how later you will need poultry seasoning the remaining onion and salt and pepper)
8oZ/1 Stick unsalted butter (cut into 1Tbs pieces)
1/2-cup flour
2 cups chicken stock
2 cups beef broth/stock
1 cup chopped yellow onion (cut up a whole onion the remainder you will use with the chicken)
1 cup chopped celery
1 cup peeled chopped carrots
1 cup frozen pees
1-cup red skin potato (skin still intact fiber baby fiber)
Salt and Pepper to taste
1 tsp of Italian seasoning
2 pie crusts store bought (you only buy one package because 2 crust come in a package)
1 egg
Pie tin

Preheat oven to 425 degrees F

To start get a heat a large pot of water with the remaining onion, poultry seasoning, salt and pepper to taste along with the chicken. I put 2-3 pieces because it depends if you like it meaty or not so meaty. So you let that boil until the chicken is slightly pink when cut in half (it will continue to cook in the pie so don’t worry about getting all that pink out!)

*Note I only have one pot so I had to do this first clean the pot and start on the soup part, if you have two large pots well you can do this part while the chicken cooks or you can prepare your veggies in a separate bowl for adding later.

In another large pot melt butter over medium heat and add the flower stirring it in and slowly adding the chicken and broth stock. Remember to Stir CONSTANTLY (it will begin to smell nutty).

After adding all the stock bring it to a boil.

Add the veggies and salt pepper and Italian seasoning to taste (for me that was about 5 grinds of pepper and 2 of salt). Let the veggies cook for about 5 minutes or until the potatoes are tender.

Add the chicken and let cook for another couple of minutes. Remove from the heat.

As the soup cools prepare your piecrust. Line the bottom of the pie tin with the first crust. Pour the soup into the pie tin. Now take your top pie crust unroll it on a flat surface that has some flour on it so it wont stick and cut a hole in the center and about 4-8 slits so it looks like a sun. Place the top crust on top of the pie and then close the perimeter by taking your fingers and squishing the top crust and bottom crust together in a pinching motion (here’s a picture for reference). Now beat the egg in a small bowl and brush onto the crust and put it in the oven. Let the CPP cook for 15 mins at 425 then turn down for 30-45 mins at 400. Check on the pie when the crust is the color you like take it out and let it set for 10-15 minutes before serving (I am not good at this step)

Pumpkin Pie
Ingredients:
1 piecrust
1 14oz can Libby’s Pure Pumpkin
1/2tsp slat
1tsp ground cinnamon
1/2tsp ground ginger
1/2tsp ground cloves
2 eggs
1 can evaporate

To cut this short all you do is follow the directions on the pumpkin pie can (I know I’m a cheat but it makes a good pie) I did however add in more cloves I believe and more cinnamon would be fine too in my book! The other note I would add to this is about the pie crust, you dont need to pre pake it or anything just place it in the pie tin make your pinched edges and pour the pumpkin pie filling in before you put it in the oven.

Well dinner was amazing and I was again in bed asleep by 9 this time and up at 10 again (grrr). Sunday turned out to be a lazy day went to the gym and walked down to bistro 33 and had some good food. Poodles hamburger (apparently amazing I didn’t even get a bite) and Me a Chicken Panini that was more of a chicken grilled cheese but still good. Then it was back to the apt where I conveniently curled up and slept and watched movies with poodles for the remaining of the day. I don’t do this often so I wasn’t feeling so bad about it but today was back to the grind working on budgets that could drive a person crazy! And tonight left over chicken potpie and sending poodles back to SOCAL (lucky!) But on the bright side...next week is Thanksgiving!!!

Getting Ready for the Weekend

Well the weekend is almost here and will inevitably pass me by in the blink of an eye. The boy toy is coming up to visit! But I'm also beginning to feel a little sick you know ache and my nose is running. This is no good! I'm hitting the sauce well at least the cold meds for now to try to kick it out of my system. As for the weekend looks like its gonna be me boy toy movies and a few errands nothing major. As for everything else in my life, work is KILLING me! Ive got enough projects to work on top of my regular stuff that you probably wont be hearing from me for a while. Plus I'm trying to get all my xmas gifts done. I keep saying I'm almost done then find a new project for a different person but really I'm almost done!!!! I'm also being super lazy in the cooking department, I went to Trader Joe's to buy fruit for a wedding shower that I'm going to tomorrow and ended up buying a pizza for dinner. But enough about my indiscretions! I think its time to eat and sleep so have a good weekend I'll fill you in with the details later!

Vetrans Day Flash Back

Well today was just one of those overly productive days. It was a holiday I know a genuine bonified holiday (aka Veterans Day). No I didn’t sleep in although many would say I should have. Instead I was up at my normal time and off to the gym to get in my workout so I could have the rest of my day to myself! But first off I have to go back in time to Sunday.

Sunday…
Sunday was amazing but then disaster struck in the form of a baking nightmare. I was making blonde brownies from this website everything was going great I was excited to try them out. I hadn’t had blonde brownies for a while let alone blonde brownies with my favorite candy bar in them!!! So I was baking as I normally do following the directions. I placed the pan in the oven and walked away to do some embroidery for Xmas gifts. I checked on my brownies and they looked like they were coming along but they weren’t puffing up like brownies do instead they looked hard like a cookie. I ignored this and went back to my embroidery to come back to them and pull them out. They were still flat as a cookie and even worse because I thought they should puff up a little they looked like this:

BURNT!!!!
I know it was disastrous but u know me I’ll eat it no matter what. A little vanilla ice cream makes everything better. So now I have these burnt brownie bar things in the freezer. I’m not knocking this person recipe at all but I must have screwed up somewhere and I cant figure out where!!! So from this I went on to make an AMAZING Turkey Chili and Sweet Potato Fries.
The Chili Came from Here and its a Turkey Chili which means its a little more healthy
Its delicious I would add a little more chili powder to make it kind of spicy but that’s me! As for the fries again amazing and if you’re a living alone I've got the recipe so you don’t make to many!

Sweet Potato Fries
1 sweet potato
2 tablespoons olive oil
French Fri Seasoning to taste (someone gave me this seasoning if you want you can season with salt and pepper chili powder whatever floats your boat)

Turn oven on to 425 Degrees

Wash the sweet potato and cut off any blemishes you wouldn’t want to eat (its okay to eat the skin its actually makes the fries a little more tasty if you ask me). Next cut the sweet potato ends off and then cut the Sweet Potato in half. Now with your halves cut those in half so you have a long flat side. Place the flat side down and cut strips to make the fries shapes (you can cut the potato however you like but this is how I did it). Next place two tablespoons of olive oil in a bowl along with a few shakes of the French Fri Seasoning. Place the Sweet Potato slices in the bowl and move around so they are covered in the oil. Place the sweet potatoes a cookie sheet and place in the oven for around 10-15 minutes then take them out and turn them and put them back in the oven for another 10 minutes. They should be a golden brown to dark brown color depending on how you like them!

So at least Sunday ended on a good note of some homemade chili and sweet potato fries. Yes it was good and now probably not diet approved but I tried okay!

Back to the Here and Now!

So as I was saying it’s a holiday and I have been productive. After the gym came home and tried my luck at some blonde brownies with candy bars instead of chocolate chips and I struck pay dirt!!!

All because of my mother the Home EC teacher. I emailed her on Monday and asked if she had a recipe and she did its even one she uses in her class! She faxed it on up and it worked amazingly with a few adjustments for my liking . So here it is in just 10 EASY steps!

Blonde Brownies
1 cup All Purpose Flour
1 teaspoon Baking Powder
¼ c or 4 Tablespoons Butter (salted)
1 cup packed brown sugar
2 eggs
½ teaspoon vanilla extract
8 oz or one cup of chopped candy bar or chocolate chips

1. Preheat the oven to 350 degrees
2. Grease a 9x9” pan
3. Measure Flour and Baking Powder into a bowl and mix together
4. Melt Butter in a small saucepan and then remove from heat
5. In a separate bowl mix together the Butter and Brown Sugar using a wooden spoon
6. Add Eggs and Vanilla to the Sugar-Butter mixture stir until combined
7. Stir in dry ingredients (ie Flour and Baking Powder)
8. Stir in chopped up candy bar (I used snickers and kit kat)
9. Using a rubber spatula spread the mixture into a greased pan
10. Bake at 350 degrees for 20-25 minutes (check with a sharp knife by piercing the center of the brownies it should come out clean)

Ahh success! While these were cooking and long after they were done I worked on these little bike bags for a co-worker who is getting married. They are from Canada and just got bikes for riding around in Davis I thought it was time for a couple bags so they could take some stuff with them easily.

They are very cute I love them I'm going to make a few more and put them up on etsy when I get a chance and make myself one too! I got the idea from this blog, but please be warned that instead of a single piece that is 3x22inches I would go for 3x25 inches and then cut off the excess. I added the interior too, which is not included in the tutorial. When I put one together next I’ll make a tutorial to share.

After completing these projects it was off to the movies. My friends make fun of me because I like to go to the movies in the middle of the afternoon especially on Fridays when I work half days! I call it me getting into my old age and believe they are just jealous. So I went and saw Zack and Miri Make a Porno. Very funny and cute not for the youngster though lots and lots of nudity even I didn’t really want to see all that nudity! And then it was back home to work on Xmas gifts. These gifts seem like they are never ending I guess its good I started so soon but I’m so close to finishing too!! It will be over before I know it and then hopefully ill be back to the normal routine of making stuff for etsy and myself. OOOh in better news the boy toy is coming to visit on Friday. This wasn’t planned he has to take an exam at Sac State because he is moving up here to finish school!!! My level of excitement for that day is rising cause finally ill have someone to eat my food so I can try out new stuff and not be eating leftovers for weeks to come! Well I guess its time I get back to work on projects and get Xmas wrapped up!

In remembrance…

In Flanders Fields
By: Lieutenant Colonel John McCrae, MD (1872-1918)
Canadian Army

In Flanders Fields the poppies grow
Between the crosses row on row,
That mark our place; and in the sky
The larks, still bravely singing, fly
Scarce heard amid the guns below.

We are the Dead.
Short days ago
We lived, felt dawn, saw sunset glow,
Loved and were loved, and now we lie
In Flanders fields.

Take up our quarrel with the foe:
To you from failing hands we throw
The torch; be yours to hold it high.
If ye break faith with us who die
We shall not sleep, though poppies grow
In Flanders fields.

Sweet Jalapeno Chicken

Its been a very busy week for me when it comes to crafting and cooking and being me. Ive upped by gym time to an hour in the morning and an hour at night for Cardio (I'm determined to get back on track). To be honest its not that bad Ive been cycling about 3 times a week its amazing I highly recommend it to anyone. On top of that I've been working on some Xmas stuff for the family and its getting there. Today it was off to the lake for Alumni day and me in my infinite wisdom didn't take a wet suit (the water was cold) , gloves, ski, or a towel for that matter. Can you tell I was not planning to get in the water and well it happened (damn peer pressure). But now I'm home in my nice cozy studio cooking up some chicken and rice, but its not any chicken and rice its Sweet Jalapeno Chicken and rice and it runs about 500 calories. This recipe is for a single serving so if you want it for more people...double it triple it quadruple it (I don't know how to say for multiplying by five so I will stop). This meal takes about 20 minutes to prepare so if you need a quick fix this is your ticket!

Sweet Jalapeno Chicken
Ingredients:
water
1/2 cup rice
1 chicken breast boneless skinless
1 inch of onion ring (cut the onion so you have a 1inch thick ring and quarter to put in with the chicken)
2 grinds of salt3 grinds of pepper
1 teaspoon poultry seasoning
Sweet Jalapeno Sauce (I bought this at the local Farmers Market in Davis and have no idea if you can get it at the grocery store so if anyone knows please let me know!!!)

You will also need 2 pots a small one for the rice and a larger one for the chicken.

First start off with your Chicken it can either be frozen or defrosted. Place enough water in the pot so it covers the chicken with about 1-2 inches of water add Onion, Salt, Pepper, and Poultry Seasoning, Cover the pot and let it boil until cooked (NO PINK on the inside).

Rice, Now this is a warning I'm not good at cooking rice so however your mother taught you go with that. I cook 1/2 cup rice with about 1 1/2 cups of water. if you start the rice after the chicken use some of the chicken stock instead of the water. Cook the rice until its how you like it.

Now when your chicken is done take it out of the pot and cut it up in to smaller pieces. Take your rice and put it in a bowl and place the chicken on top. Now add your Sweet Jalapeno Sauce I used about 2 tablespoons but use as much or as little as you like it creates a sweet and sour type of sauce with a kick! Mix in the sauce with the chicken and rice so it looks like this

Now its grub time 500 calories of deliciousness (especially good on a gloomy day like today!)

Day Light Savings

Its Day Light Savings! All I have to say about that is for once in my life it has SAVED me! Last night I was up late working on some stuff to sell on ETSY. Nalgene Cozy's (picture bellow) maybe in a few weeks when I'm done with the Xmas gifts ill post a tutorial but for now I'm swamped with work but I'll try I promise. I was up way way way past my bed time and woke up to find that it was day light savings!!! So instead of it being 8:30 it was 7:30 I know what your thinking its the weekend you should be sleepinging well 7:30 is sleeping in for someone who gets up at 4:45 during the week. So I got my ass out of bed and off to the gym for some cardio! Then it was hard core errand time went to Target, IKEA, Home Depot, Picked up Laundry the works! So now hopefully I have everything to finish up Christmas gifts and a few little things for myself if I'm Lucky!

I'm also back into the Baking mood and pumpkin is the theme as usual (I NAB do here by promise that after November 30 there will be no more pumpkin till next fall!). So here they are some Pumpkin Choco-Chip Cookies. They kinda look like those muffins I baked a while ago but there not! Actually I find the cookies to be BETTER than the muffins. When the boy toy comes to town in a few weeks I will break out the pumpkin pie recipe! This recipe is an adaptation of THIS Amazing post by Dinner with Kirsten! So Here we go...

Pumpkin Choco-Chip Cookies

2 1/4 cups all-purpose flour
1 1/2 teaspoons pumpkin pie spice
1 Table spoon Cinnamon
1 teaspoon baking powder1/2 teaspoon baking soda
1/2 teaspoon salt
1 stick of butter softened
1 stick of margarine softened
1 cup granulated sugar
1 15 oz. can pumpkin (the smaller can)
2 large eggs
1 teaspoon vanilla extract
2 cups (12-oz. pkg.) Semi-Sweet Chocolate Morsels
1 cup chopped walnuts or pecans depending upon your liking

Preheat oven to 375° F. Grease baking sheets.

Combine flour, pumpkin pie spice, Cinnamon, baking powder, baking soda and salt in medium bowl.
Beat butter and sugar in large mixer bowl until creamy.
Beat in pumpkin, eggs and vanilla extract.
Gradually beat in flour mixture.
Stir in morsels and nuts.

Place 1 ounce ball like shapes on the cookie sheet and Bake for 15-20 Minutes (edges should be lightly browned). Place on wire racks to cool (or be like me use that old newspaper and spread it out on the table and put the cookies on there to cool it will also help absorb some of the grease)

Your done! Now enjoy maybe with some Vanilla Ice Cream (damn diet cant have to too many ill pawn them off at work!)
